Zucchini Bread/Muffins

3 cups flour
1 1/2 cups sugar
1 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
2 cups grated zucchini
1/2 tsp. salt
1 cup nuts (I use walnuts)
1 c. raisins
1 cup oil
3 eggs

In a large bowl, stir flour, sugar, cinnamon, baking powder, baking soda, salt, zucchini, raisins and nuts.

In a separate bowl, beat eggs and oil. Pour over flour mixture. Stir until moistened. Turn into greased loaf pans or muffin pans. Bake 350 degrees for:

One loaf pan - 1 hour 30 minutes
2 loaf pans - 1 hour
muffins - 18 minutes
mini loaf pans - I forgot

Toothpick in center test
Cool 20 minutes. Cut when cool.
